Seasons, soil, wild herbs and naturally fermented foods were simply part of life. Fermentation was woven into her DNA long before she realised it would shape her life’s work.

After moving to London, Elena spent over a decade at Borough Market, immersed in the world of top-quality ingredients and inspired by passionate chefs. Here her love for authentic food reconnected with her roots and her curiosity for fermentation deepened.

In 2014, she founded Puntarelle & Co, a heart-led vegetable business where her knowledge of food supply chains grew and meaningful relationships with growers and customers flourished. Guided by a zero-waste philosophy, Elena used fermentation to honour the harvest, reduce food waste and elevate everyday meals.

This passion evolved into London Fermentary, a brand that fused tradition with innovation, gaining recognition around the world for its soulful, small-batch ferments and bold creativity.

By 2024, all these experiences led to the birth of FERMARY, a modern, female-led brand offering premium, 100% raw fermented foods designed to nourish gut health and elevate everyday eating.
